Oatmeal Cookies
Ingredients

Butter 113g
Caster sugar 113g
Brown sugar 100g
Large eggs 1
Vanilla 1tsp
Limes 2 (zest of 2 and juice of half)
Plain flour 160g
Salt 1/4 tsp
Baking Powder ½ tsp
Bicarbonate ½ tsp
Ginger 2 tsp
Oats 100g
Desiccated coconut 75g
White choc chips 150g
Method
– what you’ll need to do
1. Preheat your oven to 190c/170c fan
2. Cream butter and sugar, light and fluffy
3. Add in the eggs, vanilla, zest and juice.
4. Sift dry and mix gently.
5. Fold in oats, chocolate and coconut.
6. Spoon and bake 10-12mins.
7. Serve with a nice cool glass of milk
